Marron Glace refers to chestnuts, which are candied in sugar syrup and then glazed. The process has its origins in Southern France and Northern Italy. These little delicacies are believed to date back to the end of the Crusades when the warriors returned to Europe with sugar, which was better than honey for some applications. The outer glaze or icing was added later, probably in the 16th century, and both Lyon and Cuneo claim title to that process.

The specific chestnuts used for this process are a much larger variety and are generally 3 to 4 times more expensive because of a lower harvest yield. Approximately, 20 different steps are needed from harvest to finished product and most establishments still prefer to do these by hand.

Marron Glace can be eaten, as is, straight from the package for the most elegant of snacks. However, they are often used as additions to ice cream, custards, and even soups and salads, not to mention Thanksgiving stuffing.
