“Colomba” is the Italian word for “dove,” an international symbol for peace. In this case, Colomba refers to the shape of an Italian traditional Easter cake. Like it’s Christmas counterparts Panettone and Pandoro, this Easter holiday dessert bread is made from flour, yeast, eggs, butter, cane sugar and candied fruit such as candied orange peel or citron. It is then covered with an almond glaze and decorated with whole almonds and sugar.

The sweet and delicate taste of apricots is combined with the traditional leavened dough that is topped with a crunchy icing and decorated with whole almonds. Albertengo’s Albicocca (Apricot) Colomba is a true specialty.
